Arkansas cooking is made with elegant simplicity and love for the sole
purpose of sparking joy. Taking your time, making enough to share,
and sharing food within the community is something you can always
count on in the south. Comfort, community, love, and generosity are
all connected through food in my home state. My Arkansas roots
have led to a passion for cooking with simplicity, time, and creativity.
BBQ has a long history in Arkansas and was the first institution to be
desegregated in the state. To me, BBQ means fellowship and sharing.
Pork and Beef are staples when it comes to Arkansas BBQ. Mississippi
pot roast is also very popular in its neighboring state of AR. I have
combined these influences to make my smoked tender beef chuck
roast that pulls apart just like grandma’s sunday pot roast. Throughout
my years in Colorado, I have often felt a longing for the comforting,
hearty, stick to your ribs flavors of my home state and that’s why I am
bringing The Smoke Post Catering and mobile BBQ food trailer to Fort
Collins!
